Simple & Delicious To Make At Home
The Rum Daiquiri
No blender required, this classic daiquiri is mixed.
2 oz. The Real McCoy® 3 Year Rum
1 oz. fresh squeeze lime juice
3/4 oz. simple syrup
For the simple syrup combine equal parts sugar and water and heat or stir until sugar is completely dissolved.
Pour measured ingredients into a shaker with ice and shake vigorously until cold.
Strain (or double strain) into a coup and garnish with a lime wheel.
The shake is an integral part of any fresh citrus cocktail as it both aerates and emulsifies. This provides a silky mouth feel while also curbing and integrating the acidity of the lime (or other citrus) juice.
The final key to this cocktail move is dilution. The same cocktail unshaken would likely taste unbalanced; too lime-y (lack of emulsification) and too boozy (lack of dilution).

1 oz. Ginger Simple Syrup*
1 oz. Fresh Lime Juice
Dash Orange Bitters
Pinch Sea Salt
Shake & pour over rocks. Garnish with lime wedge and sea salt
*Syrup: 1 cup each cane sugar and water and a 2-3 inch piece of fresh ginger, peeled & sliced thinly into coins combined in saucepan. Heat & stir until sugar dissolves. Cool & strain into jar. Refrigerate for up to 2 weeks.
