Teeing up a Rhubarb Daiquiri weekend.🌱🩷🌱
2oz The Real McCoy 3 Year
1 oz Rhubarb Simple Syrup*
3/4 oz Fresh Lime Juice
Add all ingredients to tin (a canning jar works, too!). Shake well with ice until frosty, then strain into coupe. Garnish with curl of rhubarb, edible flowers or lime wheel.
N/A Option: Add ~1oz of Rhubarb Simple Syrup to seltzer, ginger or tonic and top with a squeeze of lime for an easy mocktail.
*Rhubarb Simple ⸺
1 cup Rhubarb, chopped
1 cup Water
1 cup Cane Sugar
Pinch Sea Salt
Optional: 2 tsp Hibiscus petals or teabag for more color.
Heat all ingredients to a boil in small pot, stirring, then reduce & let simmer until rhubarb breaks down completely. Strain through cheesecloth and refrigerate covered for up to 2 weeks.
Makes about 1 1/2 cups syrup.
*Zero-Waste Tips*
- Reserve the sweetened rhubarb pulp from straining to use as a spread on toast or toss in a smoothie ;)
- Lime rinds can be zested into desserts or candied for garnishes & snax!
Note: Rhubarb leaves should be discarded, tho, because they’re toxic!
